Did Picasso ever do paintings and not sign them?

Yes. But they inevitably ended up in museums, private collections or remained in his estate -- in which case they were all inventoried. While he was alive, his policy was to sign them immediately before sending them to his long time dealer, Daniel Henry Kahnweiler. Also, it was not uncommon for Picasso to sign and even date the rear of the canvas, especially in the analytical cubist paintings.

Speaking of the rear of canvases, if one looks at authentic Picasso paintings, its usual for them to have numerous stickers showing Kahnweiler's gallery, the collectors who owned them, and exhibitions which displayed them (see attached photo).
